TikTok sensation Vincent Yeow Lim is better known online as Dim Sim Lim where he has attracted millions of followers watching him prepare delicious Chinese dishes by putting a spin on some old favourites.

Drawing inspiration from his time as a student, Yeow Lim takes simple dishes such as toasties, pasta and stir-frys and creates delicious meals infused with Asian inspiration.

Vincent, who also owns the Lawson Chinese Restaurant in the Blue Mountains, joined The Morning Show to demonstrate how to prepare the humble ham and cheese toastie with a mouth-watering twist.

HAM & CHEESE TOASTIE INSPIRED SHUMAI DUMPLINGS

– Cut wonton wrappers 1.5cm smaller (refer to video)

– Mince pork shoulder with cleaver until it is mince (do not use food processor)

– Add all the seasonings to mince

– Throw mince into a bowl repeatedly or mix until pasty (important step)

– Make shumai using the filling, add cheese on top of shumai and steam for 7 minutes in oven or until cooked

– Steam Chinese sausage, dried scallop and dried prawns with 1 tbsp of shaoxing wine for 15 minutes or till soft

– Place pork lard in a wok

– Add very finely chopped bacon

– Add chilli and chilli flakes to oil on low

– Add shallots and garlic to shallow fry till fragrant

– Add sausage, shrimp and scallop mixture to cook till golden brown

– Add brown sugar, dark soy and cook till caramelised add water if needed

– Finely chopped 1 clove garlic to a pan

– Cut bread into small cubes 2mm in size

– Fry with oil till golden brown, then leave aside

– 24K gold flakes for the top

During service, reheat shumai for 3 minutes and serve on a plate with xo sauce on each sui mai and three pieces of tiny croutons for crunch and add 24k gold leaf on top.
